Ingredients

  • Greek yogurt (10% fat) 150g
  • Eggs 3
  • Fresh dill, parsley, and mint 1 tablespoon, chopped
  • Garlic 1 clove
  • Butter 20g
  • Smoked paprika, chili flakes, cumin, mustard seeds, salt, and pepper to taste

Method

    Mix the Greek yogurt with finely chopped herbs, minced garlic, salt, and pepper.

    Poach the eggs in hot, simmering water for approximately 3 minutes.

    Melt the butter in a small pan and stir in the smoked paprika, chili flakes, cumin, and mustard seeds until fragrant.

    Spread the yogurt mixture on a plate, top with the poached eggs, and drizzle with the spiced butter.
