Tuna Nicoise Salad

Ingredients
- green beans 100g
- new potatoes 150g
- plum tomatoes 4
- eggs 2
- tin tuna 1
- black olives 75g
- baby gem lettuce 1 head
- red onion 1/2
- capers 1 tbsp
- olive oil 2 tbsp
- lemon juice and zest 1
- Dijon mustard 1 tsp
- honey 1 tsp
- Salt
- Pepper
Method

Cut potatoes into equal sizes.

Add potatoes to a saucepan with cold, salted water.

Bring to a boil and simmer for 15-20 minutes until cooked through.

Drain potatoes and rinse with cold water.

Bring a separate saucepan of water to a boil.

Add eggs and cook for 7 minutes.

Add trimmed green beans to the water for the last 30 seconds of cooking.

Remove eggs and green beans and place in an ice bath.

Peel eggs and cut into four pieces.

Shred lettuce.

Slice red onion.

Drain tuna.

Mix olive oil, lemon juice and zest, Dijon mustard, honey, salt, and pepper for the dressing in a small jar or bowl.

Add all salad ingredients except eggs to a bowl.

Add dressing and toss.
