Cottage Cheese Lasagna image

Ingredients

  • Oil spray 1 spray
  • Onion 1
  • Garlic cloves 2
  • 5% fat beef mince 500g
  • Beef stock cubes 2
  • Passata 500ml
  • Red lentils 50g
  • Lasagna sheets 150g
  • 0% fat cottage cheese 500g
  • Mozzarella 30g
  • Salt, pepper, and herbs to taste

Method

    Sauté onion and garlic in a pan with a spray of oil.

    Add beef mince and brown it.

  3. 3

    Stir in stock cubes, passata, lentils, and seasonings.

    Simmer for 30 minutes to reduce the sauce.

    Blend the cottage cheese until smooth.

    Layer the beef mixture, lasagna sheets, and blended cottage cheese in a baking dish.

    Top with mozzarella.

  8. 8

    Bake at 180C for one hour.
